Omac, one of the indispensables of Yozgat breakfasts, is served with the smell of sweet butter.

1 Dry phyllo
2 Eggs
1 Tablespoon of butter
a little salt
We cut the phyllo into small pieces with our hands (I took it out in the freezer, so it was easier to break it up because it was icy).
We put the butter in our pan and melt it. Contrary to what is known, I first put the phyllo in the melted butter and fry it a little, it turns out crispy and better.
Then we break the eggs into another bowl, add a little salt and mix with a fork. Pour it over the fried phyllo and mix until the eggs are cooked together with the yufka. Enjoy your meal.
