Çiğdem pilaf is a type of pilaf made with edible ingredients that children collect by visiting house to house, within the framework of the celebrations of the beginning of spring called Çiğdem Tour, which is more intensely practiced in the Yozgat region, or Hıdırellez (in Yozgat dialect: Eğrice or Ağrice) and Nevruz celebrations.
Ingredients
4 bowls of bulgur
1 bowl of butter
8 bowls of chicken stock
1 bowl of crocus
Preparation of:
Melt the butter in a pan. Add bulgur and fry. Then add the chicken broth. When the rice is cooked, add the root part and flower of the crocus. You can serve it after resting for a while.
