"Arabaşı" is the most important dish of Yozgat, indispensable for cold winter nights. Yozgat is a kind of snack that is served during long winter nights after dinner and during conversations before going to bed. For this reason, although the original name of the dish is "intera vaccine", it has taken the form of cartage in folklore. Flour, water and salt are used as materials. Chicken or turkey meat is used for the soup.
Ingredients Required for Making Yozgat Carriage: (12 people)
For the Dough:
5 kg of water
650gr flour
For the Soup:
Chicken or Turkey (breast)
5 kg of water
5 spoons of flour (oil-free roasted flour)
2 tablespoons of tomato paste
1 tablespoon of paprika
150 and 200 g of oil
Preparation of:
3 liters of 5 liters of water is left to boil over the fire. Add 650 gr flour to the remaining 2 liters of cold water and mix it with a mixer to form a slurry. The slurry is poured into the boiling water abruptly. When the dough starts to burst like popcorn, it is boiled for another 3-4 minutes, mixed with a rolling pin, and poured into 2 sinews of 40 cm and left to cool. For our soup, we boil the chicken with water. We drain the water and shred the chickens. In a pan, we fry 1 glass of flour without burning it until it turns light color. Take the roasted flour in a bowl and open it with a little water. We take the oil and tomato paste in the pan and fry it. We add the chicken broth, add the roasted flour that we opened with water and mix it with a wire whisk. Add the shredded chickens and add boiled water if the consistency of the soup is thick. Add the spices and the juice of 1 lemon and boil for about 20 minutes. Enjoy your meal.
